Actually, I welcome experiments and ideas with flavor. Taste is relative, and different flavors are meant to make the barbecue better. But the ideas that make barbecue so easy that a monkey can do it - I have no use for those, at least not in contests. I find no glory in being able to take a bottled rub and a butt, toss them in a tumbler, toss it on a cooker with a thermostat controlling the temp and smoke, then serve what is admittedly a very good product while pretending it was slaved over. It's no more challenging or rewarding than cooking a bag of microwave popcorn without burning it. But that's just me. I'm a grouch. My own teammates don't even necessarily agree, so whatcha gonna do.
We're also fortunate (for lack of a better word) to love our contest recipes. I eat more candied pulled pork than any meat. Serve it up on a waffle and life's good. Also, a KCBS contest is a barbecue contest, not a meat contest.
