I have been involved with KCBS contests for going on 25 years. During that time, I have cooked many contests and judged quite a few. It has been a few years since I have judged, but the majority of those times I was told by the reps giving the judging instructions that this was a MEAT contest and not a sauce contest. Maybe things have changed since I last judged.
I'll agree with Raine's sentiments that the contests are no longer about the meat but about the sauce. I'll defend my own opinion by asking this question.
How many of these bbq contest cooking classes cover the subject of flavor profile?
