Maybe that's why we never win. We keep turning in barbecue instead of just meat.
I've only taken one class, about a year ago, and it covered flavors as much as it did techniques. Now I wish the instructors would have explained that while rubs, marinades and sauces might add incredible flavor to these cuts of meat, the judges are being told that those flavors don't count. So while a judge might like a perfectly cooked rib dripping with Blues Hog much better than a perfectly cooked rib rubbed with salt, pepper and garlic powder and served up dry, that judge's taste is irrelevant. He/she needs to rate the entry as instructed, not as he/she sees fit.
Oh, well. It's still fun.
