The reps didn't tell the judges what it should taste like. The point is it is about the meat, not the additives. And when you have so many additives, that you can't taste the meat, then it is no longer about the meat. You want to make it easier, then just keep it simple. Meat flavored with smoke...Good bbq doesn't need anything else.
Interesting to know how many of the bbq legends (the Monks, Bridges, Swicegoods and so on would stay in business if they starting serving what is now being judged in contests.
