I want to taste the meat I'm judging, a little rub or sauce to compliment it is fine, but not to actually be the flavor. And to the point that the barbeque has become too sickening to eat more than 1 bite of it.
I doubt any restaurant is injecting and parkaying and candying their products to the degree it is in contests if at all. Too much time and costs added to an already labor intensive business.
