You haven't been on a Kansas City barbecue joint crawl apparently. Injecting and Parkaying? Probably not. But marinading? Deep, complex rubs and sauces? Absolutely. Maybe even the occasional tumbler getting all that flavor extra deep. So, I'm sorry not every barbecue restaurant does it the way you think it has to be done, but we're pretty happy with it.
