Pat, maybe you touched on part of the differece. You say KC Q is deeply flavored, heavily sauced, etc., maybe it's a regional difference as much as anything. And the midwestern missionaries with all their classes are spreading the midwestern (read KC) version of Q and it's invading other areas, like the midAtlantic, the home of highly respected Carolina Q in its several forms. And, like so many things, judges are deciding they score candy-Q higher than traditional (read noncandy-Q) barbecue. I DO believe, however, that real sweetly-sauced meat scores very high with many judges. Personally, I don't particularly care for sickeningly sweet "lollipops" whether they are called chicken or ribs. But, like every team out there, ya' gotta' do what works best for you, regardless of its authenticity. All I can do is call it as it crosses my plate. Good Q'en On Ya'. John
