Barbecue is a great American Cuisine. Not made in Japan. It used to be about taking tough cuts of meat and making it into something special. In a KCBS contest there were 2 long cooks, and 2 short. Now it's about maniupulating pallets with chemicals, paying outrageous prices for meats, and cooking as fast as the meat will allow...all for what? Money...HaHa, There's no money in competition BBQ! You want bragging rights, learn the art!
