What a can of worms! I fall to both sides. While I do jump through the hoops for the latest methods (candy ribs/chicken, muffin pans, iPad controls, vertical parsley, etc) I do love old school stick burners, all night bull sessions and salt and pepper Brisket. I don't think there's a contester straighter in shooting the truth than Johnny Trigg and he has told us he wouldn't eat his contest ribs for pleasure.
I love the taste of smoked meat but if you don't have that one bite that grabs the judges attention, you might as well stay home and watch Pit Master reruns.
