Personally i would bump that cook temp to 245* and cook to 175* then double wrap in foil and cook till its tender....temp is a guide,each piece of meat is different,mine has varried from 198*-205*.I start checking at 195* and check every 30 mins till its tender.Remember to slice across grain.Good luck
