Would recommend you look at back issues of the KCBS BullSheet and make notes and crunch the percentage.
Think you'll find only a few teams win more than 50k/year. Note that's win, not earn after expenses.
As to the 2nd part of your question, "...what percentage spend or loose more than they make per year cooking in contests?"; again hard to say, would think most.
I would not recommend BBQ competitions as an occupation to anyone.
If you develop a BBQ related product/service, then you can successfully use your participation in BBQ competitions to promote your product/service; but I would encourage you to view your BBQ comps as a promotional expense for your BBQ related product/service and not as a source of income.
You'd do better getting a realator's license and selling homes/apartments/commercial properties.
