I cook on a Good One Marshall and I start my briskets and butts at 4:00 a.m. wrap at 7:00 a.m. and pull off around 11:00 a.m. for contests. I cook my meat at 275. Sometimes its a little more time because I pull off when I achieve the tenderness that I want.
