I am glad you asked because I have not cooked chicken either way for a long time and that's a mistake. I really like chicken cooked either way. The beer butt chicken is my favorite but the skin is no good cooked this way.
I think the first time I tried spatchcocked chicken was when Dylan was talking about cooking it on a Weber Smokey Mountain without the water pan in the cooker. It cooks really fast and the chicken skin is much better. Over all the finished product tasted really great.
I don't know of anyone talking about cooking either method in contests. Maybe someone will answer that. But it seems to be getting harder and harder to get people to give up their contest secrets.
