Around here you take poultry shears and cut down both sides of the backbone removing it completely. Turn the bird breast up and flatten it with the skin holding the leg quarters to the breast and ribs.
When you look at it from the breast side you see 2 wing, rear quarters and a whole breast.
This the way I've done them but others may have different ideas.
