Cut bones off, and tie back on. Stud fat side with slices of garlic. Liberally season with kosher salt and freshly ground pepper.
Smoke @ 225* to an internal temp of 122* for rare, 130* for medium rare. Foil wrap and wrap in old bath towels. place in cooler rinsed out with hot water. Let rest a minimum of 20 minutes, remove and slice as desired.
