Cut bones and tie back on. Marinate overnight with olive oil, Worchester, garlic pepper, and salt. I use pecan chips and smoke at 250-275. bones down. Remove at 125-135 based on your desired doneness. Loosely foil for 15-30 min.
A nice touch is to heat grill as hot as it goes then roll entire prime around on it for a minute or two.Puts a nice crust on the outside. Let rest again for 15-30 min then slice and enjoy.
