Keep it simple -- good meat like this doesn't need to be messed with. Rub lightly with either salt and fresh ground cracked pepper or McCormick Montreal Steak rub. Reverse sear at 180 for 45 minutes to one hour to infuse smoke. Remove to oven, pellet cooker or gasser and cook at 375 until IT is to your preference for doneness.
