Okay,I have only I small charcoal grill and I can't put wood and charcoal in it and smoke a 12 lb boston but, I just don't have the room.
So instead I was thinking of cooking it this way and let me know if you think it's silly or not please. I'm gonna marinate the butt overnight and then put it in the oven on 225 degrees until it's done. Then after it cools and I chop all the meat up.
Here's what I'm gonna try,I'm gonna place a big sheet of non stick foil in my small grill along with some hickory smoking chips on the bottom, then light the chips to start the smoking process and then lay the chopped meat on the foil and let the smoke do it's job. Do you think this will work?
