Actually meat will not produce a smoke ring after 140-145 degrees. It will always take on more smoke. There is a really good article on this floating around but I cannot find the link right now.
I have never tried what Taylor is suggesting but do not see why it could not work better than adding liquid smoke. Just get some smoke on it for 30-45 minutes on a low heat why not?
Taylor I do wonder why you think pork butts are 12 pounds. Normally they are 7-8 pounds. Good luck. Mary Ann
