I have rigid sheet (.040++ thick approx.) that I think I purchased by walking into a large restaurant equipment supply house in the city.
The sheets were sold near the pizza pan and baking equipment section.
I've had mine a long time (10+ years) and love them.
If the sheets were not purchased at a restaurant supply house, then the only other place that I would have bought them was at an industrial plastic supply house that sells sheet of various material.
If purchased at a plastic supply house, the sheet probably was not *food grade* material, so I would have purchased plain old 'polyethylene' sheet...it may have some other names such as 'LDPE' or 'HDPE'...if you can walk into a bricks and mortar place to buy this stuff, you'll be able to see and touch (and flex?) the sheet before you buy it.
I am a home cook and have done a few contests so I don't need a lot...what I do have is one large sheet cut square on a table saw so as to neatly fit into a large sheet cake pan and a couple of smaller (12"x12"?) sheets for smaller cutting jobs. (These smaller sheets were cut to a size that would fit down into the bottom of my competition barbecue wash tubs so they could be fully soaked and easily transported)
I love using the larger sheet with the (in the) shallow sheet cake pan as it keeps any errant juices contained within the pan.
FYI, polyethylene is the same stuff (I believe) that clear/cloudy milk jugs are made of.
