Talked my buddy through his first cook of a 7-lb flat, low and slow on the Weber kettle for the first half, and finishing in the house. He's bouncing off the walls -- "it's so tender... the house smells great..." He'll bring it to a seder tonight and shine like a star. No grandma's brisket tonight... Texas brisket! Feels good to help someone do that.
