Don, I have never cooked a kosher beef product but use Empire kosher chickens all the time as they seem to be the best at least for home cooking. I rarely brine but in any case have never tasted too much salt. Just do not like the plucking of feathers but worth the effort. I guess your experience is different re salt? Mary Ann
