Today I'm firing up the kettle and smoking a corned beef flat I seasoned last night with new pastrami rub I'm tinkering with. It's going to become part of a burger tonight that is a mix of ground chuck, brisket and bacon along with my beef rub. Thanks to the inspiration of a friend of mine the burger will have a toasted bun, chipotle mayo, pork sausage patty on bottom, bbq sauce, burger patty, pastrami, bacon, caramelized onions, colby and pepper jack cheeses, pick;es, lettuce and tomato plus a little horseradish cream sauce on top bun.
Tonight or maybe tomorrow night I'm smoking a brisket, 9 racks of ribs. a case of butts and making rib tips. Have 2 other butts that I'll butterfly and season then roll up and use to make some Italian sandwiches similar to a porchetta. Have buns coming today from a bakery and have an olive salad that will get used on some of the sandwiches and several cheeses and other various toppings for others.
Gotta make slaw and potato casserole for Monday. Putting 3 meals together to feed guys from meat company I deal with. Feeding sales guy, driver and owner. Gotta thank them for their help they have given over the years:)
Glad we have warmer weather this weekend!
