judging ribs

most of you know I cook with JOS occasionally and this might seem like treason (since he was one of the first to do this )but cant we go back to ribs that taste and look like ribs ...we had 6 candy ribs at Thomaston and 5 were done perfectly for being beautifully glazed and were super sweet but I could not taste the rib itself ...and I know the teams will say they are cooking what we as judges want ...so judges it is really up to you do you want a rib that is so sweet and glazed numerous times or do you want a rib perfectly smoked with a great rub and sauce put on it but not drenched with a perfect finishing sauce....and don't worry I do not score down if its not the way I like it ..I do know how hard it is to cook a contest and how hard it is to find out what an area of the country the judges do like .....sometimes I like the old KISS way of cooking (keep it simple stupid).but that's me
