I agree with bob and jackitup fat side down I just got home from Thomaston this morning and cooked 4 butts today fat side down (it also depends on whether to trim some of the fat off I got these 4 at sams club and they had very little fat on the bottom and no fat cap whatsoever) so when they were done I could pull what little fat was left or just pull it and mix it into the half steamer pan with the meat...hope this helps
