And did you find KCBS saying it is candied, sticky, chemical shot up and buttered? KCBS has stated as verified by the many who have posted it here that it is a meat contest not a sauce contest . When you can no longer taste the meat but only the sauce and additives, the meat is lost, then it is no longer a meat contest, but a contest to see how much and how many other things you can add to it.
The tradition and history starts at the beginning. That's where the preservation comes in, which KCBS does say.
The United States Department of Agriculture says barbecue is any meat "cooked by the direct action of heat resulting from the burning of hardwood or the hot coals therefrom for a sufficient period to assume the usual characteristics" including the formation of a brown crust and a weight loss of at least thirty percent.
The solution isn't going to come from 1 or 2 people and it isn't going to come in one day.
