You didn't grasp what I said in the other posts, it is not about using a sauce to compliment the meat . The issue is with so many additives other than sauce that all you can taste is the additives, not the MEAT. Could you eat meat that had a pound of salt added to a pound of bbq? And not all judges like the overpowering additives either.
Then you didn't read my other posts, we are winning. But winning after spending 2 years learning how to cook bbq you can't stand eat. We walked to the stage in every contest but 1 last year, and finished in the top 10 in all but 1 contest. With our pork scoring no lower than 4th. So it has nothing to do with our scoring.
