A judge should be able to tell what you think is how the meat should taste? They should just know? Yeah, you're not answering my question. How do you find out if they do know? Test them? Give them a sticky sweet rib and a simple rib, and if they like the sweet one better, they're out?
And I know quite a few people - in fact, almost everyone I know in the entire world - who like dessert because they like dessert. If you have actual statistical evidence of an epidemic of gagging judges sprinting toward DQ because they need "to get the sickening taste from their mouth" rather than because they just like dessert after a day of barbecue, present it to the Board and get something done. If it's just anecdotal, remind them that there are saltines and water for that, and if they'd stop giving high scores to candied entries, they might get to try something different.
