The 00 flour is more suited to wood fired ovens that get to the 800 degree range. You would be much happier with a hi gluten flour (13-14% protein) or even a bread flour. Bread flours have protein content of 6-7%, all purpose 3-5 as I remember. King Arthur brand is a good one. RD Depot has 50 pound bags of Kyrol hi gluten that is a very high performer but some balk at the fact it is bromated, I don't care. Sir Lancelot is another real good flour.The higher the protein content the better stability and oven spring you will find, great for breads too!!
