Seriously, at small association contests that have 25-35 entries (same teams over and over), it's not too difficult to begin recognizing a team by the flavor of the sauce. Particularly if they are consistently getting called. I like the flavor of the meat, and in general, will scrape the sauce off. Enough remains on the meat to let me decide if it is complimentary to, or overpowering the meat.
