I cooked one this winter in the oven, because there was about 12 inches of snow on the ground. Do not over cook a tri trip. I did put some Adolphs meat tenderizer on it and some brisket rub. I cooked it to 140 degrees and when it was done I sliced it thin across the grain. It was tender and very tasty. I still have a little bit in a Lock and Lock container in the freezer. I make a sandwich with it ever once and a while.
