I have come a long way from the typical oven baked until falling off the bone ribs from my childhood. I grew up in the midwest and that still seems to how most people judge great ribs - Do they fall easily off the bone? I don't even hear much about the taste, just the texture. It is fine if people like that, just don't tell me that is what good ribs are.
