Hey, I made some really good beef short ribs. Just layer them (seasoned with good salt and pepper) with sliced onions top and bottom. Cook on low for about 8 hours. Although I have not done much of it, you can cook in a crockpot without much or any added liquid. In this technique the onions and the fat and juice from the meat provide enough. I think I turned them over once.
The best slow cooker cookbook I know is Not Your Mother's Slow Cooker Cookbook. A realy good recipe for chocolate hot fudge spoon cake in there.
Thing about slow cookers and meat is there is no way for the grease to leave the gravy. So do what you need to do about that. This is very related to bbq re slow cooking of meats. Mary Ann
