emac, i've read that there is confusion about the smoke ring and the amount of smoke you can place on meat. The smoke ring forms for only about the first three or so hours, but smoke can be added to the meat for the whole time it cooks if you continue to add it. You can definitely ruin the taste of meat by over-smoking it. Thanks for your reply. I just need to know if a pork butt can take a lot of smoke or only a limited amount, for the best product.
