If you are going to "pull" the meat and mix the "bark" thru out the meat, then 3 - 5 chunks won't be too much... If you're going to slice it, I'd back off to 2 - 3 chunks...then again, what kind of wood? Hickory is pretty intense and apple is nicely mild... 2-3 chunks of apple equals 1 chunk of hickory.... then again, what size of chunks?.... then again, what temp are you cooking at?
