whatever I smoke I figure a light to medium smoke on the meat for 1/2 or less of the TOTAL cook time. More than that gets bitter, acrid, creosote tasting and can ruin a bunch of good meat. A lighter hand rules with smoke imo, too heavy....yuck!!!
