I cook hundreds every year and overcooking is a SIN. Cook to 125 deg and toss in cambro for 1/2 to 1 hr. slice against the grain. If cooking to 140 you are going too far, it is like a steak, the higher the intermal temp the tougher. If you want tri-tip well done you might as well go to McDonald's.
