That being said, if one were to grind his own from a primal cut, i.e. butt, you could stay on the lower side. I would not push store bought/pre-ground lower, but my own fresh ground meat I would have less of a problem. 'NOT' to forget, those with immune issues, kids, elderly, etc....COOK FULLY!! Remember how much you love your guests!!!
