First, you need to cook then indirect, i.e. not directly over the coals. If you have room, lay them out flat. If not, use a rib rack. You can run your cooker at about 275 degrees. You can cook them this way until done, or you can cook them about two hours, then foil them for an hour, then take them out of the foil and finish them. I like to brush BBQ sauce on them about 15 or 20 minutes before taking them off. Good luck.
