You may not be cooking them long enough. Looks like your cooking at 225 for 4 hours. You spritz hourly, door open you lose heat and about 1 hour total cooking time. Secondly, you are cooking in a 225 environment but every hour you spray a cool liquid on your ribs cooling them down which also adds to your cooking time.

At 225 degrees you need almost 5 hours to produce a good rib. You are not even getting a good 4 hours cooking time in. Up your temp to 250 and quit spraying them, it does not do anything except give you something to do.......
