Just a guess, but the first ribs were under cooked and the second time you over cooked them...3-2-1 for BBs are too much foil time. it will result in a sponge like cake mouth feel.
Like Rick said, try cooking them in the 250-260* grate temp range. You will get a little nicer rendering of fat...fat is flavor and moister.
