My rule of thumb for a mixed crowd is to do 1.33 to 1.5 servings per person and multiply that amount by your serving size (I normally use 4 oz.).

For your gig this would work out as 300 x 1.33 x 4 = 1596/16 = 99.75 lbs. of meat. This rounds to 33.33 lbs. for each of the 3 meats. If you want to figure more servings per person, substitute a larger fraction for the 1.33 figure, i.e., 1.5. This would increase the total meat needed to 112.5 pounds or each meat quantity to 37.5 lbs. A similar adjustment can be made to the serving size.
