Unlike the other two attributes, Appearance and Tenderness, there are no descriptions or guidance given in KCBS rules for Taste. Makes sense -- it is almost impossible to describe. See my articles on that very topic here on this site.
Advice: Brisket has a wonderful, natural "beefiness" that most people find quite likeable. Also, beef and sweet sauce don't make a great combination, often. You may have over-sauced or otherwise done something that clouded the flavor. Good flavor balance in brisket requires an even and conservative hand with sauces, rubs and injections.
