Controllers are programmed for the pellet cooker they are fitted to. While smoke-watching may be entertaining, it may have little to do with the flavor infusion you want. Periodic "acres" of white smoke, in my opinion, are inferior to more consistent blue smoke production periods.

Pellet cookers are inherently efficient heat producers and the purpose of the "cycles" is to induce smokier periods during the cook. This is (for most brands) done at the lower temperatures. When adapting to pellet cooking, you learn to use a smoking phase, usually early in the cook, on some recipes where higher temperatures may reduce overall smoke production.
