I was curious about this cheese and I found a few people that didn't like it. One woman said it was disgusting. One writer said he was accused of being a St. Louis hater because he didn't care for Provel cheese. It has to be labeled "Pasteurized processed cheese. Another person described the stringy cheese as an "acquired taste." Yet another person said "it's a mainstay favorite in St. Louis and an important building block for one of the best pizzas in the world."

People who have grown up eating this cheese mixture and have moved away where they can no longer get the cheese dream about it. I think I will pass and I am crazy about cheese. I am trying to take better care of myself and as a result I restrict my intake of cheese. I do like Provolone, Cheddar, Fontina, Parmigiano Reggino fresh Mozzarella amongst many others.
