Not from the exact St. Louis area, about an hour East, but have eaten a LOT of Imos Pizza and they use Provel cheese on their pizzas and I personally think they are AWESOME. I know there are some who dont like it as well, their tastes tending more towards the traditional pizza cheeses. I've not ever used it myself nor have I ever seen any in stores etc. but on the pizza at Imos it seems to have a softer texture. Its definitely thicker than melted Velveta but thinner and softer (smoother) than a melted Mozzarella or Cheddar.
