Lot of interesting reading on the websites you listed, thanks. There are a lot of variations in the ratios, but there seems to be a little consistency of some items. Am surprised at how much sugar some recipes have in proportion to the other spices and herbs. Then, some have no sugar at all. In many cases, a relatively large quantity of paprika is used. Bottom line is that it seems a person has to experiment to come up with something he/she likes. Many thanks for the replies. P.S. Regarding sugar, I'm a little hesitant to use anything other than turbanio (sp?) since is can burn and give a bad taste.
