Hi there, when I cook bbq I like to let the meat be the focal point and then keep the sides simple. Some of my favorites are:
For an appetizer Dr. BBq's mac and cheese soup served in small cups, weather should not be too hot yet for this, maybe put some cooked greens, just a little, on top. You can find this recipe through Google.
Grated carrots with a dressing of olive oil, fresh squeezed orange and lime juice, and Dizzy Pigs Jamiacan Firewalk seasoning but you can use salt, pepper, some kind of jerk seasoning or other to your hotness taste but not too hot.
Grilled pineapple either as a dessert or a side. No seasoning required!
Almond fennel cake for dessert, link below, this is always a big hit with sliced fresh strawberries. A bit(not a lot) of Greek yogurt with a litle honey and chopped mint on top adds something but not necessary. Very easy to make and almond flour is around now in many supermarkets.
I am finding that people have a wow factor with lighter, very flavorful foods next to the heavier bqq meats for the main course. Let us know what you do. Mary Ann
