Does anyone frequent a great butcher in Chicago's SW burbs?
I live in the southwest suburbs of Chicago, near Palos Hills/ Oak Lawn for those familiar. I just started to smoke meats with a horizontal offset smoker, but having trouble finding quality meat. Most of the local butchers have turned into meat markets that receive frozen meats already butchered. I'm having a hard time finding a beef brisket or pork shoulder that has not already been trimmed of the fat cap.
Does anyone have any great recommendations for butchers on the south side?
