I have done events where we have served 500 pounds of pulled pork in a weekend. We used coolers, cookers and Cambros to hold our butts. We were able to keep butts in a safe range (140+) for around 4-5 hours with no problem. It's important to know, like Ol Dan stated, the least amount of time you open the cooler, the better the heat retention. Also, the more hot butts you put in, the hotter the ambient temperature inside the cooler will stay. Here is a link for holding butts.
